- 2 cups of broccoli florets, finely chopped
- 1 cup of feta cheese, crumbled
- 2 large eggs
- 1/2 cup of breadcrumbs (plain or seasoned)
- 1/4 cup of grated Parmesan cheese
- 2 tablespoons of olive oil
- 1 clove of garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a mini muffin tin with olive oil or cooking spray.
- In a large bowl, combine the chopped broccoli and crumbled feta, then add minced garlic.
- In a separate bowl, whisk together eggs, breadcrumbs, and grated Parmesan. Season with salt and pepper, then mix with the broccoli and feta.
- Spoon the mixture into the muffin tin, pressing down lightly.
- Bake for 20-25 minutes until golden brown, then let cool slightly before serving.
Notes
- Store leftovers in an airtight container in the fridge for up to 3-4 days.
- Reheat in a preheated oven at 350°F (175°C) for best results.
