This Simple Ground Beef and Potatoes recipe is a hearty, no-fuss meal ready in under 30 minutes. Perfect for busy weeknights, it combines ground beef, potatoes, and simple seasonings into a comforting dish loved by the whole family.

  • Total Time: 30 minutes
  • Yield: 6 servings

Ingredients

Scale
  • 1 pound ground beef
  • 2 pounds potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth (or water)
  • 2 tablespoons olive oil
  • Optional: chopped parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain any excess grease.
  2. Add chopped onion and minced garlic to the skillet with the ground beef. Cook until the onion is softened, about 3-5 minutes. Add the cubed potatoes and stir to combine.
  3. Pour beef broth into the skillet. Season with salt and pepper, then bring to a simmer. Cover and cook until the potatoes are tender, about 15-20 minutes.
  4. Once the potatoes are tender and the liquid has reduced slightly, remove from heat. Garnish with chopped parsley if desired. Serve hot and enjoy!

Notes

  • Add diced carrots, peas, or green beans for extra nutrients.
  • Spice it up with red pepper flakes or hot sauce for heat.
  • Top with shredded cheddar cheese in the last few minutes for a cheesy version.
  • Mix in a brown gravy packet with the broth for a richer sauce.
  • Feel free to use any type of potatoes such as Russet, Yukon Gold, or red potatoes.
