  • Total Time: 1 hour 50 minutes

Ingredients

Scale
  • 1.5 lbs ground beef
  • 2 large onions, diced
  • 4-5 medium potatoes, thinly sliced
  • 2 cans (10.75 oz each) condensed cream of mushroom soup
  • 1 cup beef broth
  • Salt and pepper to taste
  • Optional: shredded cheddar cheese for topping

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat and add diced onions until softened. Drain excess grease and season with salt and pepper.
  2. In a mixing bowl, combine the cooked beef and onions with cream of mushroom soup and beef broth, mixing well.
  3. Preheat the oven to 375°F (190°C). Layer half of the sliced potatoes in a greased 9×13-inch baking dish, then add half of the beef mixture. Repeat the layers.
  4. Cover with foil and bake for 1 hour. Remove the foil and bake for an additional 20-30 minutes until the potatoes are tender and the top is golden brown.

Notes

  • Thinly slice the potatoes for even cooking.
  • Drain the grease from the beef to prevent heaviness.
  • Add cheese between layers for extra flavor.
  • Let the casserole rest for 10-15 minutes before serving.
