Instructions
- In a large bowl, combine ground meat, breadcrumbs, egg, minced garlic, chopped green onions, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated.
- Shape the mixture into uniform meatballs, about 1 to 1.5 inches in diameter. Place on a parchment-lined baking sheet.
- Arrange the meatballs in the slow cooker. Pour sweet chili sauce, soy sauce, and rice vinegar over the meatballs. Cover and cook on low for 4-6 hours or high for 2-3 hours, until fully cooked and tender.
- Gently stir the meatballs to coat them in the sauce. Garnish with chopped cilantro if desired, and serve hot over rice or noodles.
