Instructions
- Begin by gently smashing the cucumbers with a rolling pin or the back of a heavy knife to release flavor and soften texture. Then, cut into bite-sized pieces and place in a bowl.
- In a small bowl, whisk together rice vinegar, soy sauce, sesame oil (if using), olive oil, sugar, and minced garlic to make the dressing.
- Pour the dressing over the smashed cucumbers and toss gently to coat evenly. Add crumbled feta and herbs if desired. Toss lightly again and serve immediately.
Notes
- Best enjoyed fresh within 2 hours of preparation.
- If storing, keep in an airtight container and drain excess liquid from feta before refrigerating.
