Instructions
- In a large bowl, combine carrots, granulated sugar, and brown sugar; let sit for 10-15 minutes.
- In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Mix melted butter and vanilla into the carrot mixture, then gradually add dry ingredients until just combined.
- Preheat oven to 350°F (175°C) and drop rounded tablespoons of dough onto prepared cookie sheets.
- Bake for 10-12 minutes until edges are golden; cool before transferring to a wire rack.
- For frosting, beat cream cheese and butter until smooth, then gradually add powdered sugar and vanilla.
- Frost cooled cookies and decorate as desired.
