Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 tablespoons cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. In another bowl, whisk together flour, cream of tartar, baking soda, salt, and cinnamon.
  5. Gradually add dry ingredients to wet mixture, mixing until combined.
  6. In a small bowl, mix remaining sugar and cinnamon for the coating.
  7. Roll dough into 1 1/2-inch balls, then roll in cinnamon-sugar mixture.
  8. Place on prepared baking sheets about 2 inches apart. Flatten slightly if desired.
  9. Bake for 8-10 minutes until edges are golden but centers remain soft.
