- 200g ramen noodles
- 2 chicken breasts, sliced
- 4 cups chicken broth
- 2 tablespoons chili paste
- 1/2 cup heavy cream
- 2 soft-boiled eggs
- 1 cup sliced mushrooms
- 2 green onions, chopped
- 2 teaspoons sesame oil
- Salt and pepper to taste
Instructions
- Cook ramen noodles according to package instructions. Drain and set aside.
- In a large pot, heat sesame oil over medium heat. Add sliced chicken and cook until browned.
- Stir in chili paste and cook for 1 minute.
- Add chicken broth and bring to a simmer. Cook for 10 minutes.
- Stir in heavy cream and season with salt and pepper.
- Divide noodles into bowls, ladle the hot broth over, and top with sliced chicken, soft-boiled eggs, mushrooms, and green onions.
Notes
- Adjust spice level by adding more or less chili paste.
- Using cooked chicken or rotisserie chicken makes for an even quicker meal.
