- 4 medium-sized potatoes, diced
- 1 lb ground meat (beef, chicken, or turkey)
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1/2 cup diced tomatoes
- 1 jalapeño, sliced (optional)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Boil the diced potatoes until fork-tender, then drain and set aside.
- Heat olive oil in a skillet over medium heat, add ground meat, and cook until browned. Mix in the taco seasoning.
- In a bowl, combine the cooked potatoes with seasoned meat, diced tomatoes, and half the cheese; mix well.
- Transfer to a baking dish, top with remaining cheese, and bake at 375°F (190°C) for 20-25 minutes until bubbly and golden brown.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
