  • 1 lb ground meat (beef, chicken, or turkey)
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup diced tomatoes
  • 1 jalapeño, sliced (optional)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Boil the diced potatoes until fork-tender, then drain and set aside.
  2. Heat olive oil in a skillet over medium heat, add ground meat, and cook until browned. Mix in the taco seasoning.
  3. In a bowl, combine the cooked potatoes with seasoned meat, diced tomatoes, and half the cheese; mix well.
  4. Transfer to a baking dish, top with remaining cheese, and bake at 375°F (190°C) for 20-25 minutes until bubbly and golden brown.
