  • Total Time: 30 minutes
  • Yield: 8 servings

Ingredients

Scale
  • 12 oz cooked rotini or penne pasta
  • 1 cup mozzarella cheese, cut into small cubes
  • Black olives with pimentos (for eyeballs)
  • Cherry tomatoes, halved
  • Red pepper slices
  • Green bell pepper, sliced
  • Fresh herbs like parsley or basil for garnish
  • 2 tablespoons olive oil
  • 2 tablespoons Italian dressing
  • Salt and pepper to taste

Instructions

  1. Cook your pasta according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Toss with 1 tablespoon of olive oil and set aside.
  2. Prepare the eyeballs by slicing the black olives in half and inserting a small cube of mozzarella into each pimento to mimic the iris.
  3. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, red pepper slices, and green bell peppers. Drizzle with olive oil and Italian dressing. Toss gently to coat evenly.
  4. Carefully place the black olive eyeballs on top of the salad, arranging them to look like floating creepy eyes. Garnish with chopped parsley or basil for a fresh touch of color.
  5. Season with salt and pepper to taste. Serve immediately or refrigerate for a couple of hours to let flavors meld. Add extra edible decorations if desired.

Notes

  • Use vibrant, fresh vegetables for best visual impact.
  • Get creative with the eyeball design; small cheese or vegetables can be added for realism.
  • Serve chilled to keep the eyeballs firm and spooky.
