Ingredients
Scale
- 12 oz cooked rotini or penne pasta
- 1 cup mozzarella cheese, cut into small cubes
- Black olives with pimentos (for eyeballs)
- Cherry tomatoes, halved
- Red pepper slices
- Green bell pepper, sliced
- Fresh herbs like parsley or basil for garnish
- 2 tablespoons olive oil
- 2 tablespoons Italian dressing
- Salt and pepper to taste
Instructions
- Cook your pasta according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Toss with 1 tablespoon of olive oil and set aside.
- Prepare the eyeballs by slicing the black olives in half and inserting a small cube of mozzarella into each pimento to mimic the iris.
- In a large mixing bowl, combine the cooked pasta, cherry tomatoes, red pepper slices, and green bell peppers. Drizzle with olive oil and Italian dressing. Toss gently to coat evenly.
- Carefully place the black olive eyeballs on top of the salad, arranging them to look like floating creepy eyes. Garnish with chopped parsley or basil for a fresh touch of color.
- Season with salt and pepper to taste. Serve immediately or refrigerate for a couple of hours to let flavors meld. Add extra edible decorations if desired.
Notes
- Use vibrant, fresh vegetables for best visual impact.
- Get creative with the eyeball design; small cheese or vegetables can be added for realism.
- Serve chilled to keep the eyeballs firm and spooky.
