Ingredients
Scale
- 1 cup unsalted butter, melted
- 1 1/2 cups brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup fresh strawberries, chopped
- Juice and zest of 2 lemons
- Optional: powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
- In a large bowl, whisk together melted butter and brown sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to wet ingredients, mixing until just combined. Mix in lemon zest and juice.
- Gently fold in chopped strawberries until evenly distributed.
- Pour batter into prepared baking dish and smooth the top. Bake for 25-30 minutes, or until edges are golden and a toothpick inserted in the center comes out clean.
- Allow to cool before slicing. Optionally, dust with powdered sugar before serving.
Notes
- Thaw frozen strawberries and drain excess moisture before adding to batter.
- To enhance tartness, increase lemon juice or add lemon extract.
- Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
- For longer storage, freeze wrapped portions and thaw beforehand.
