- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
- Juice of 1 lime
- Fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt, pepper, and smoked paprika. Grill or sauté until cooked through, then let rest before slicing into strips.
- In a bowl, mix mayonnaise, chili powder, lime juice, and cotija cheese to create the street corn sauce. Add the corn kernels and stir well.
- Place cooked rice at the bottom of each bowl. Top with sliced chicken, then spoon on the street corn mixture.
- Garnish with additional cotija cheese, chopped cilantro, and a squeeze of lime. Optionally, add sliced jalapeños or avocado slices for extra flavor.
