Instructions

  1. In a mixing bowl, combine minced garlic, olive oil, chopped herbs, salt, and pepper. Rub this mixture generously all over the beef roast.
  2. Toss the quartered onion, chopped carrots, cubed potatoes, and roughly chopped red bell pepper with olive oil, salt, and pepper in the same mixing bowl.
  3. Place the seasoned beef roast in the center of the roasting pan, arranging the prepared vegetables around it. Preheat the oven to 325°F (160°C) and roast for about 20 minutes per pound.
  4. Once the roast reaches the desired internal temperature, let it rest for at least 15 minutes before carving. Serve with the caramelized vegetables and drizzle with balsamic glaze if desired.
