- 2 tbsp Olive Oil
- 2 tbsp Fresh Herbs (such as rosemary, thyme, and oregano), chopped

- 1/2 tsp Black Pepper
- 1 large Onion, quartered
- 2 Carrots, peeled and chopped
- 2 Potatoes, peeled and cubed
- 1 Red Bell Pepper, roughly chopped
- 2 tbsp Balsamic Glaze (optional)
Instructions
- In a mixing bowl, combine minced garlic, olive oil, chopped herbs, salt, and pepper. Rub this mixture generously all over the beef roast.
- Toss the quartered onion, chopped carrots, cubed potatoes, and roughly chopped red bell pepper with olive oil, salt, and pepper in the same mixing bowl.
- Place the seasoned beef roast in the center of the roasting pan, arranging the prepared vegetables around it. Preheat the oven to 325°F (160°C) and roast for about 20 minutes per pound.
- Once the roast reaches the desired internal temperature, let it rest for at least 15 minutes before carving. Serve with the caramelized vegetables and drizzle with balsamic glaze if desired.
