  • Total Time: 1 hour 5 minutes
  • Yield: 4-6 servings

Ingredients

Scale
  • 1 pound ground beef
  • 1/2 cup bread crumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • Salt and black pepper to taste
  • 8-10 slices of bacon
  • For the glaze:
    • 1/4 cup honey
    • 2 tablespoons soy sauce
    • 1 teaspoon Dijon mustard

Instructions

  1. In a large bowl, combine ground beef, bread crumbs, chopped onion, minced garlic, egg, ketchup, Worcestershire sauce, salt, and black pepper. Mix thoroughly until well combined.
  2. Shape the mixture into a loaf shape on a parchment-lined baking sheet or place in a loaf pan.
  3. Lay bacon slices over the top and sides of the meatloaf, slightly overlapping for full coverage.
  4. Mix honey, soy sauce, and Dijon mustard in a small bowl to prepare the glaze. Brush generously over the bacon-wrapped meatloaf, saving some for later.
  5. Preheat oven to 375°F (190°C). Bake for 50-60 minutes, until internal temperature reaches 160°F (70°C). Brush more glaze about 10 minutes before finishing.
  6. Optionally, broil for 3-5 minutes to crisp up the bacon, watching carefully to prevent burning.

Notes

  • Ensure bacon overlaps slightly for even coverage and crispy texture.
  • For a leaner version, substitute ground turkey or chicken, cooking to an internal temperature of 165°F (74°C).
  • Use high-quality honey and bacon for the best flavor.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
