- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1 pineapple, peeled, cored, and cut into 1-inch pieces
For the Marinade:
- 1/4 cup olive oil
- 1/4 cup orange juice
- 1/4 cup lime juice
- 2 tablespoons soy sauce
- 2 tablespoons chopped cilantro
- 2 cloves garlic, minced
- 1 tablespoon adobo seasoning
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
Instructions
- In a medium bowl, whisk together olive oil, orange juice, lime juice, soy sauce, cilantro, garlic, adobo seasoning, cumin, smoked paprika, and cayenne pepper. Season with salt and pepper to taste.
- Place chicken cubes in a resealable bag and pour the marinade over it. Add bell peppers, onion, and pineapple, seal the bag, and refrigerate for at least 2 hours, preferably overnight.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Thread the marinated chicken and vegetables onto the skewers, alternating ingredients for a colorful display.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Cook skewers on the grill for about 10-12 minutes, turning occasionally until chicken reaches 165°F and vegetables are tender.
- Baste skewers with remaining marinade during the last few minutes of grilling for extra flavor.
- Let skewers rest for a few minutes before serving to allow juices to redistribute.
- Serve garnished with fresh cilantro or lime wedges alongside your favorite side dishes.

- For added heat, increase cayenne pepper or use a hot sauce.
- Chicken breasts can be substituted but may require careful cooking to avoid dryness.
- Additional vegetables such as zucchini or cherry tomatoes can be included.
- If a grill is unavailable, skewers can be broiled or cooked on a grill pan.
