  • 1 red onion, cut into 1-inch pieces
  • 1 pineapple, peeled, cored, and cut into 1-inch pieces

For the Marinade:

  • 1/4 cup olive oil
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 2 tablespoons soy sauce
  • 2 tablespoons chopped cilantro
  • 2 cloves garlic, minced
  • 1 tablespoon adobo seasoning
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, whisk together olive oil, orange juice, lime juice, soy sauce, cilantro, garlic, adobo seasoning, cumin, smoked paprika, and cayenne pepper. Season with salt and pepper to taste.
  2. Place chicken cubes in a resealable bag and pour the marinade over it. Add bell peppers, onion, and pineapple, seal the bag, and refrigerate for at least 2 hours, preferably overnight.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Thread the marinated chicken and vegetables onto the skewers, alternating ingredients for a colorful display.
  5. Preheat the grill to medium-high heat and lightly oil the grates.
  6. Cook skewers on the grill for about 10-12 minutes, turning occasionally until chicken reaches 165°F and vegetables are tender.
  7. Baste skewers with remaining marinade during the last few minutes of grilling for extra flavor.
  8. Let skewers rest for a few minutes before serving to allow juices to redistribute.
