- 1 pound ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can black beans (15 oz), drained
- 1 can corn kernels (15 oz), drained
- 1 packet taco seasoning
- 4 cups beef or chicken broth
- Shredded cheese, sour cream, chopped cilantro for topping
Instructions
- In a large pot, cook ground beef and onion until browned.
- Add garlic and cook for 1 minute.
- Stir in diced tomatoes, beans, corn, taco seasoning, and broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Ladle into bowls and top with cheese, sour cream, and cilantro.
Notes
- You can substitute ground turkey or chicken for beef.
- Adjust spice levels with additional chili powder or pepper.
