- 1 cup wild rice
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon thyme

- 1 cup chopped kale or spinach
Instructions
- Cook wild rice according to package instructions and set aside.
- Heat olive oil in a large pot over medium heat.
- Sauté onion, carrots, and celery until tender, about 5 minutes.
- Add garlic and cook for another minute.
- Pour in vegetable broth, add thyme, salt, and pepper, and bring to a boil.
- Reduce heat, add cooked wild rice, and simmer for 15 minutes.
- Stir in kale or spinach and cook for an additional 5 minutes.
- Adjust seasoning if needed and serve hot.

- You can add cooked chicken or sausage for extra protein.
- Use fresh or frozen vegetables based on availability.
