For the Glaze:

  • 2 cups powdered sugar
  • 1/4 cup apple cider
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the dry ingredients by whisking together flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl.
  2. Reduce the apple cider by boiling it in a saucepan until it thickens to about 1/2 cup.
  3. In a separate bowl, whisk the reduced apple cider with sugar, melted butter, egg, and vanilla extract, then combine with the dry ingredients and fold in diced apples.
  4. Heat vegetable oil in a deep pot to 350°F (175°C) and drop spoonfuls of batter into the oil, frying until golden brown.
  5. Prepare the glaze by whisking powdered sugar, apple cider, and vanilla extract until smooth and dip each fritter bite in the glaze.
  6. Place the glazed fritters on a wire rack to let excess glaze drip off and serve them warm.
