For the Glaze:
- 2 cups powdered sugar
- 1/4 cup apple cider
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the dry ingredients by whisking together flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl.
- Reduce the apple cider by boiling it in a saucepan until it thickens to about 1/2 cup.
- In a separate bowl, whisk the reduced apple cider with sugar, melted butter, egg, and vanilla extract, then combine with the dry ingredients and fold in diced apples.
- Heat vegetable oil in a deep pot to 350°F (175°C) and drop spoonfuls of batter into the oil, frying until golden brown.
- Prepare the glaze by whisking powdered sugar, apple cider, and vanilla extract until smooth and dip each fritter bite in the glaze.
- Place the glazed fritters on a wire rack to let excess glaze drip off and serve them warm.
