Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 2 tbsp Cajun seasoning (adjust for spice preference)
- 1 tbsp olive oil
- 2 limes (zested and juiced)
- 2 cloves garlic (minced)
- 1 tsp honey (optional, for balance)
- Salt and black pepper to taste
- Fresh cilantro or parsley (for garnish)
Instructions
- Pat the chicken breasts dry with paper towels to ensure even cooking. In a bowl, mix the Cajun seasoning, lime zest, minced garlic, salt, and black pepper. Rub this mixture generously onto both sides of the chicken, ensuring every piece is well coated.
- Heat olive oil in a large skillet over medium-high heat. Once the oil is shimmering, it’s ready for the chicken. This ensures a perfect sear and locks in all those delicious flavors.
- Place the seasoned chicken breasts in the hot skillet. Cook for 5-6 minutes per side, or until the internal temperature reaches 165°F (75°C). Add lime slices to the pan during the last few minutes of cooking for extra citrus flavor.
- Once cooked, remove the chicken from the skillet and let it rest for 2-3 minutes. Drizzle with fresh lime juice and a touch of honey (if using) for a sweet-tangy finish. Garnish with fresh cilantro or parsley for a pop of color and freshness.
Notes
- Store leftover chicken in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave with a splash of lime juice to refresh the flavors.
- For a spicy kick, add a pinch of cayenne pepper or red pepper flakes.
- Chicken thighs can be used instead of breasts for a juicier result.
- Marinate for up to 2 hours for deeper flavor, but avoid over-marinating as lime juice can start to ‘cook’ the chicken.
