- 1 lb flank steak, sliced
- 2 limes, juiced and zested
- 1/4 cup chopped fresh cilantro
- 2 cups cooked rice
- 1 cup sliced bell peppers
- 1 cup diced tomatoes
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Marinate steak slices with lime juice, lime zest, garlic powder, salt, and pepper. Set aside for 10 minutes.
- Heat olive oil in a skillet over medium-high heat. Grill or cook steak until desired doneness, about 3-4 minutes per side.
- Warm rice and divide into bowls.
- Top rice with grilled steak, sliced bell peppers, tomatoes, and fresh cilantro.
- Garnish with extra lime wedges and cilantro if desired. Serve immediately.
