Ingredients
Scale
- 4 fresh fish fillets (cod, tilapia, or salmon)
- 3 tablespoons olive oil
- Juice and zest of 1 large lemon
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper to taste
- Optional: lemon slices and additional herbs for garnish
Instructions
- In a small bowl, whisk together olive oil, lemon juice and zest, minced garlic, chopped parsley, oregano, thyme, salt, and pepper to create the marinade.
- Pat the fish fillets dry and place them in a shallow dish. Pour the marinade over the fish, ensuring all pieces are evenly coated. Cover and refrigerate for at least 20 minutes.
- Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it with olive oil.
- Arrange the marinated fillets on the baking sheet. Garnish with lemon slices and extra herbs if desired. Bake for 15–20 minutes until the fish flakes easily with a fork.
- Serve hot, garnished with fresh parsley or basil. Pair it with salads or roasted vegetables for a complete Mediterranean meal.
Notes
- Use fresh herbs for a more vibrant flavor.
- Adjust lemon juice to suit your acidity preference.
- Serve with a drizzle of olive oil for extra richness.
